The Ruin Serpent in Genshin 2.6 is a Normal Boss, and the 2.5 Livestream has already revealed a few things about it, including its rewards. It has been leaked that Ruin Serpents will drop Prithiva Topaz Ascension Materials as well as a new item called "Runic Fang" at level 30+.

Burning with eternal resentment and malice toward the world above, they throw themselves into digging great tunnels, yet none know what their malicious purposes are..."
